Ritual Coffee Roasters Gihombo

This week's featured coffee is Ritual Coffee Roasters Gihombo. Perusing the local grocery store shelves (we're darn lucky to have an amazing selection of coffee in the Bay Area), the flavor notes on this one jumped out and practically fell into our basket.

COFFEE SPECS

  • Country: Rwanda
  • Producer: Small Private Lots
  • Varietals: Bourbon
  • Production Method: Wet-Process (with 12-hour dry fermentation)

HOW WE BREWED IT

  • 60g medium grind
  • 700ml ice/water mix
  • 1 drip/second initial drip rate
  • 5-6 hour brew

We were on the look out for cherry, strawberry and lime, and we definitely picked up some the the lime like acidity, but grapes and chocolate covered raisons were unmistakable in our brew. We were impressed with the flavor clarity of this particular coffee.
